Broccoli Mushroom Soup Recipe by Nutritionist Prachi
Ingredients
- 1/2 bunch broccoli
- 1 tablespoon olive oil
- 1/2 cup fresh mushrooms
- 2 medium carrots, finely chopped
- 1/4 cup finely chopped onion
- 1 garlic clove,
- 2 cups water
- 2 tablespoons lemon juice

Method
- Cut broccoli in small size pieces. Peel and chop stalks.
- In a large saucepan, heat oil over medium-high heat; saute mushrooms until tender, 4-6 minutes. remove from pan.
- In same pan, heat oil add garlic and onion sauté for few minutes add broccoli and carrot ,cook until broccoli get soft add 2 cup water
- Blend it in soup consistency return to pan. Add mushrooms; bring to a boil. Add lemon juice and black pepper.
